Bowls… Best ever food trend I think…? Advertising healthy eating, balanced diet and happiness… But what kind of bowl? I like breakfast bowls mostly, do You?
Breakfast. Every morning same meal and sometimes same topping for weeks. Yes I do love my apple and cinnamon oatmeal but sometimes I need changes and if pineapple instead of apple is not quite enough it means that is the time for changes… Probably not very much options You have when diet is restricted to vegan and gluten free, but we are here not to moan about our hard lifestyle, we are here to inspire each other! So what about inspiration for breakfast? I personally cannot stand toasties or cornflakes for breakfast, just whines me up and if that’s not enough I am feeling hungry again in minutes!!! Literally leaving a house and listen for hunger songs in my stomach. And no matter how much calories I had still no point, so my choice is old fashioned – porridge and fruit. But again, oatmeal is just too boring today, what can I do?
Apple Pie Quinoa Bowl
Quinoa Breakfast Bowl Simple and easy to make, as always here we don’t wanna extra rush in the morning, so everything is prepared evening before. How organised I am! Therefore we love quinoa we can cook a massive amount and eat it with every meal or freeze it in a zip lock bag, just spread it and let cool down, otherwise it will be solid ice block. Anyways, cooked quinoa can wait for the morning when You gonna add all delicious toppings. Finally, what is good breakfast without a cup of delicious coffee or tea? I prefer coffee, but to stay on healthy side I choose herbal tea instead. What is your favourite drink in the morning?
Can You believe that only 4 ingredients is needed to make super powerful nutritious breakfast? Creaminess and delicious hint of apple pie is a perfect good day start.
- 1 cup dry quinoa
- 2 1/2 cup non dairy milk
- 1 medium apple
Firstly, cook quinoa in non dairy milk until all liquid is absorbed and grain looks soft and fluffy, about 20 minutes. Actually, the same as You usually cook quinoa but this time in milk 🙂
In the end of cooking add grated apple and cinnamon into cooking quinoa pot and stir in to help flavours to blend in. Simmer for another five minutes, stirring time to time to prevent burning and it is ready to eat!
Finally, what is Your excuse now for eating crap? Good and nutritious breakfast is cheap, probably even cheaper than overprocessed cornflakes, and delicious too.
