Salad could be favourite meal. So versatile, and so different, people never know what salad are You talking about… I like to tease my colleagues with this, one of them thought I eat only coleslaw and nothing else, because she don’t know any other salad recipes. Poor lady, I thought, but she seemed not really interested in anything else than coleslaw, so I gave up sharing the recipes and leave her and her mayo loaded coleslaw alone…

My most popular salad usually is rushed whatever veggies from the fridge and some fat free dressing, but I fed up with it… At all, most of the time it tastes the same and I love my greens, but same thing over and over again is bit too much, even for me.

Probably, because I fed up with same food for lunch I start look into new horizons… Not really far I reached, only local Chinese takeaway to understand that I love Asian food. Come back home and checked couple recipes, skip fish, omit egg and chicken and that’s it – my new Asia infused In Rush salad 😉

 Asian Tofu Salad

I bet this is the easiest salad ever made. You basically need to chop veggies and sprinkle some seeds on top, and if You like add soy sauce or mix it up with some agave syrup or sesame oil, but as much as I tested before publishing this – simplicity wins – soy sauce only works the best for me.

Gluten, Egg, Dairy Free Vegan Salad in 5 minutes. Quick and easy to make Asian style salad using only couple ingredients for fresh and exotic Far East flavour.

Ingredients
  • 1 cucumber
  • 5 cherry tomatoes
  • 1 block extra firm tofu (4 oz)
  • hemp seeds
  • sesame seeds
  • soy sauce (GF)
  • sea weed
Instructions
  1. Cube tofu cucumber into medium size chunks, quarter tomatoes and mix it together. Sprinkle hemp, sea weed and sesame seeds for garnish and a splash of soy sauce.

  2. Leave in the fridge for at least half an hour, let the flavours blend in 🙂

Seems like the quickest meal to make! I imagine, how good it could be when You are in manic rush and there is no time to cook lunch properly?
