Sometimes You have those days when want sweets… Not just sugar with some sugar on top and sweeteners, but something really really good. Something satisfying, hearty, probably something what reminds You normal people life, because as a gluten free vegan , be honest – we haven’t got much choices, especially to buy for a friendly price. My weakness today is donuts. Little soft rounds with a hole in the middle, looks like this treat supposed to be very limited, because it has a hole in the middle, or I am talking nonsense? Why donuts, if I go to gym now and trying to lean up? Because I want. And this is not a lack of willpower, this is clear mind, because being too restrictive leads to bad things, I know this from the past. Everything in moderate works the best in any area of Your life: if You go to gym, You need to have a regime and healthy diet plan, or at least a clue what to eat to get results fast and forever, what means that You still need to eat, but occasional treat doesn’t make much damage, especially when it is homemade and enjoyed sensibly. True?
Carob Chocolate Donuts
Feels like this recipe is the one I needed today, somehow I hit correct spot from the first time to kill my cravings. Fairy easy to make these donuts in theory, can keep up for couple days in a fridge in airtight bag or container, just because gluten free flour bakes left on the table for a day becomes impossible to bite sometimes 😀 or You can freeze them, or You have a spouse who is happy to consume them all instantly. I decorated them with traditional icing sugar and fresh lemon juice mix and topped with chopped nuts and seeds to look even better, but it is not necessary if You don’t want to do so.
These donuts a really tender, soft, much healthier than those You can buy in supermarket, not only because they are oven baked, but there is no sugar in them, just natural maple syrup for some sweetness, and no artificial flavourings. I really like the texture which is not much different to ordinary ones, not too sweet and not too fat, feels like a perfect treat for me! I hope You like them too!
- 2 flax eggs
- 1 1/2 cup flour GF if needed
- 1/3 cup maple syrup
- 2 tsp baking powder
- 1 tsp baking soda
- 1/2 cup almond milk
- 1/4 cup carob root powder
- 2 Tbsp coconut oil
- 1/4 tsp vanilla extract
Preheat oven to 190 C.
Meanwhile, in a big bowl add flour, baking powder, soda and carob root powder. Mix well, so ingrediets combined evenly.
In a separate bowl combine wet ingredients by mixing up almond milk, flax eggs, maple syrup, coconut oil and vanila extract. Then pour mixture into dry ingredients bowl and stir to combine.
Take donut baking mold and start filling them tablespoon by tablespoon. Just in case You have an overflow of batter no worries, You can poke a hole in a donuts when its baked. Bake for 18-20 minutes. Remove from oven and let cool down before decoration.
For decoration I used simple sugar and lemon juice icing and top donuts with chia seeds, chopped nuts and so. Basically, all healthy stuff will work.
