Sounds ridiculous, but now in the end of September at work we already have Christmas menu. Belly pork, turkey breast and goose fat roasted potatoes. As yummy as I start feeling sick. Most vegan meal is chocolate pudding with double cream, so guess where I am going to spend my Christmas party? Probably baking punk rock gingerbread men. But I am not ridiculous, it is just beggining of September and Christmas madness does not affect me, yet. I want to share my best breakfast so far, which is so good that I cannot even describe.

Chia Pudding with Caramelised Banana

Chia pudding is delicious itself and whatever You add on it makes it only better. I am sure You tried it with banana, but was it caramelised? Sweet and very rich flavour achieved using only 5 ingredients and nothing more. Simply fry banana with dash of sweetener in a little pan and sprinkle some cocoa nibs, or chocolate.

Ingredients
  • 1/4 cup chia seeds
  • 3/4 cup plant based milk
  • 1 banana
  • cocoa nibs
  • sprinkle of unrefined sugar
Instructions
  1. Simply soak chia seeds in plant based milk at least 4 hours or overnight. Slice banana and put into hot frying pan. Sprinkle some sugar and stir untill amazing smells comes out and banana gets soft. Pour caramelised banana on soaked chia pudding and top with cocoa nibs. Eat imediately
