Donuts or dumbells? That is the question every single time on Jaunuary first. What about both? Can we create a ballance eating delicious treats time to time and workouts? I believe we can. Everyhing in moderate is good, true?
How many times You said that January 1st will be a day when You start new healthy lifestyle, cutting out sugars, excercising every day and just be happy? I do it every single year and I can tell You never kept up with a plan strictly. Maybe I have weak willpower, maybe? But this year I want to wish everyone be happy, accept Yourself, love Yourself and try be the best person possible. That’s why very first recipe of a year is donuts, as a symbol of easy, fluffy, peaceful and meaningful year of the Red Pig, which I hope we all see as a friend rather that a meal, do we??
Simple and light textured vegan coconut donuts is dreamy as heaven! Could You believe it takes less than 1 h to make and calls for less than 10 ingredients? Oh gosh I love donuts so much! You can create wild combinations and still have amazing taste!
Overall, I dedicate this year for creativity and inner self happiness. I would like to wish You focus more on what You want to do rather than what’s need to be done, as the activities You enjoy makes You happier and protects from overburning in the fast paced world.
And now, please tried these lovely donuts!
- 1/2 cup plain gf flour
- 1/2 cup coconut flour
- 1/4 t¼ tsp baking powder GF
- 1 Tbsp milled chia seeds
- 1/4 cup coconut sugar
- 1 cup milk non-dairy
- 2 Tbsp oil
- pink icing (optional)
- coconuts shreds for decorating (optional)
Preheat oven to 200 C.
Combine together flour and coconut flour. Add baking powder and baking soda. Make sure there is no lumps remaining. Add milled chia seeds and coconut sugar, mix again.
Pour milk and oil, stir well using spoon, spatula or fork, I don’t care, just combine every single ingredient! !!! Once all ingredients is nicely mixed up in one bowl we can transfer dough into baking form. Dough should be sticky, hard to handle but not runny.
Place donuts in the oven to bake for 15 min until start browning. Meanwhile, prepare icing if using by mixing sugar with lemon juice and some some beetroot juice for colouring.
Lastly, when donuts are ready – baked and slightly cooled down drizzle icing on top and sprinkle some coconut on top, Done and Delicious!
