Honey almond traybake is good thing. Even better if it is vegan and gluten free as we usually do and like. Why sweetie again? Because I crave like crazy!!!! All I need is sweets and I can’t help it, just enjoy myself.
Actually, would be sad to flush away all hard work in gym while eating a cake, daily, but I found a reason why this sweet monster came to me, or should I say came back? Iron levels are low… Eh, not tragical, but I need to back on track and start eating good food. Being honest recently I was eating only green leaves with tomatoes and banana for dinner and that leads to lack of nutrients, especially iron. Finally have an answer of my constant fatigue, sleepiness and being a potato on a couch. But I will get better!!!
DISCLAIMER: vegan diet has no impact on my iron levels, that is overall bad eating habbits and most likely consuming hidden gluten in takeaway foods.
As You see, I want food which is good and lovely cake is a good start to put myself together and motivate You to stay healthy!
Honey Almond Traybake
- 1/2 cup rolled oats (GF if needed)
- 1 cup plain flour (GF)
- 1/2 cup vegan honey
- 1/2 tsp baking soda
- 1/2 cup whole almonds
- 3/4 cup hot water
- 1 tsp apple cider vinegar
- 1 Tbsp oil
- vegan white chocolate buttons (optional)
Preheat oven to 200 C.
In a big bowl combine oats, flour, baking soda and almonds. In a separate bowl mix hot water, vinegar, oil and vegan honey and pour the liquid in dry ingredient mix.
Mix the batter until evenly combined. Consistency should feel hard to stir, but still runny.
Line baking tray with parchment paper and pour the batter in. Top with vegan white chocolate buttons and bake about 20 minutes.
