Chia pudding is the thing which always works out right…
Seems like You even don’t need to ask anyone do they like chia pudding or not, because it is the best pudding ever! I think now why I didn’t make one for Christmas? Something healthy always cheers me up, more, even on Christmas. I will mark this down for myself…
So, about chia seeds: did You ever thought what a fantastic seed it is? You can sprinkle some on porridge, add into cereal, or make a healthy snack… This is what we do with let’s say oats – use it everywhere, but once it is soaked in water or milk it is porridge with no way back. And porridge for breakfast – perfect option, but in this case sounds boring, especially when You can have pudding.
Why I adore chia pudding so much? Because it is naturally vegan and gluten free, no processing, no modifications, just natural food straight from nature, and it is simply delicious. Best thing about chia pudding is versatility – You can incorporate everything what You like to create perfect taste for Your mood or time of a day, which means pudding does not necessarily must replace porridge in the morning, eat it as a late evening treat! Trust me – much better than oreos before sleeping 😉 However, I have a recipe which I like to eat in the morning…
Matcha Chia Pudding
Creamy and soft seeds in delicious coconut milk after overnight soak sounds good already, but let’s add some fruit for tanginess and some seeds for crunchiness, and some secret for uplifting. Just few ingredients on limited budget and unlimited flavour is Yours! I believe You as a self respecting vegan have most of the ingredients and if not, those are probably in Your grocery list anyway… So shall we try amazing chia pudding?
- 1/4 cup chia seeds
- 3/4 cup coconut milk
- 1 kiwi
- 1 sachet matcha green tea powder
- 1 tsp maple syrup (optional)
- 1 tsp spirulina (optional)
Firstly, mix chia seeds, matcha and coconut milk until most o seeds are in the bottom of bowl and leave to soak at least 4 hours or overnight, if planning to eat it for breakfast.
Once chia seeds absorbed all liquid add maple syrup and spirulina, if using. I recommend add maple syrup if You try spirulina for the first time, otherwise feel free to choose.
Finally, add Your fruits and any other toppings of Your choice and enjoy!
In conclusion, can I ask You to answer me one question? Is it so hard to eat healthy and is there nothing tasty to eat if You choose clean vegan diet?
