Why so pretty or why so green? Pretty, because of careful decoration and trying really hard (because I need to), and green because of matcha tea. Yes, we put tea in a cupcakes nowadays, who could ever thought about this before!?

Not so long ago I tried my first cup of Matcha tea. A friend of mine recommended to try matcha latte and now it is my favorite tea ever! The good thing is as it comes as a powder and gives an earthy, fresh taste to baking, which is why it’s so perfect to add to a huge variety of recipes. From cupcake to smoothie it suits well and all the goodness inside this magic green tea it’s filled with antioxidants and is incredibly good for both your body and mind. Shall we try some?

Before baking I will quickly describe the process and why it is so good, ok?

Simply amazing taste of sweetness and freshness in the same moment and somehow it makes me feel more elegant, even though I am not the most elegant eater. Also the cupcakes can be a great snack on the go! Anyways, recipe itself is very simple and You can manage using two or even one bowl to whip it up. Swirl of icing and here we go a cupcake is ready!

  • 1 cup plain gluten free flour
  • 1/2 cup sugar
  • 1 Tbsp matcha green tea powder
  • 1 tsp baking soda
  • salt
  • 1 cup hot water
  • 1/4 cup oil
  • 1 tsp cider vinegar
  1. Preheat oven to 180 C.

    In a large bowl add flour, sugar, soda, salt, and matcha tea and stir well to combine all ingredients evenly. 

    In a smaller bowl or big measuring cup pour water, vinegar and oil, stir it briefly. 

    Pour liquids into dry ingredients and mix well.

  2. Line cupcake baking tray with cupcake cases and carefully pour batter into cases tablespoon by tablespoon,  or if using silicone form can pour batter straight in the cupcake holes.  Put in the oven for 15 to 18 minutes.

  3. Meanwhile, prepare frosting, or find where is Your store brought one and wait until cupcakes are baked and cooled down, then simply decorate as Your heart desires and enjoy!
