Pumpkin bread… Ha ha, there is a story about that….
First of all, pumpkin bread is so delicious sweet bake for some reason very popular only in fall, even though butternut squash is for sale all year round. However tasty it is, not so easy to make, as it seems like from the first sight. Well, if You are doing it from scratch, so no worries… There is a long way to perfection and also a long list of disasters left behind. About disasters: never forget spices into pumpkin bread, it is essential, otherwise feels like You eat roasted rubber slipper rather than cake, and too much milk doesn’t help either… We are constantly learning from our mistakes, do we?
One Bowl Pumpkin Bread
I like when recipes can be made in one bowl. Probably because there is less cleaning after, and knowing the fact that I do not have a dishwasher that is also a big advantage in cooking. Surprisingly, the amount of bowls used is not equal the taste and quality of the bake. (I love this sentence!) Soft and fluffy pumpkin bread can be made in one bowl, if You are lazy maybe even in a baking dish (I didn’t try that, yet), no need of posh ingredients and really quick to make. What can be better?
A loaf of gooey, soft and spicy, tender, melting in the mouth pumpkin bread almost brought me to the Moon! So You better try!
Gorgeous vegan pumpkin bread can be made in one bowl. No fancy ingredients and for perfect moist and spicy vegan gluten free pumpkin bread. P.S. goes well with latte 😉
- 2 cup oats or oat flour (GF) *
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1 tsp each cinnamon, nutmeg,, ginger **
- 1/2 tsp cloves
- 1/4 cup apple sauce
- 1 cup pumpkin puree
- 1/4 cup maple syrup or coconut sugar
- 1 Tbsp flax seeds
- 1/4 tsp vanilla extract
Firstly, preheat oven to 200 C. In a big bowl place pumpkin puree, apple sauce and maple syrup or coconut sugar. Combine everything evenly until looks like smooth paste. Add flax seeds and vanilla extract, stir in to blend all flavours in.
In the same bowl with pumpkin puree add oat flour, baking soda, baking powder and spices. Combine everything until there are no lumps. Mass might look bit dry and coarse but don't worry it is OK.
Transfer dough mix into a baking form and bake about 30 minutes or until toothpick inserted comes out clean. Old rule for every bake.
*Oat flour might be expensive or unavailable in Your local shop, so You can blend two cups of ordinary oats in Your food processor until it looks like coarse flour.
**spices, feel free to adjust to Your needs. 1 tsp of ginger and nutmeg in one tiny loaf for some people may sound crazy, but for me it is good 😉
Therefore, I want this pumpkin bread look really mouthwatering I drizzle some thin sugar icing on top, but that is not needed at all, unless You want some extra sweetness. You can keep it as healthy as You can – no pressure.
