Quinoa bars… Told this to mum and she looked at me as I was crazy. I know, it is a grain, seed actually, and mostly used in savoury dishes as a stuffing or side. But who cares? We can do it if we want to! Let’s be so fancy and make quinoa tart for snacking. I mean, really don’t know how to call this, because it supposed to be a snack bars, but I put in in round shape and it looks like a tart. Well, rolled up some marzipan and You can see what happened. Fancy to try?
Quinoa Bars Tart
Simple and healthy crunch as usual for this year (so far so good) healthy as well! Maybe marzipan on top is not so healthy, but anyways, made from almonds and ton of sugar… Shame on me, but it is optional, if You wanna keep Quinoa Bars clean, just skip the marzipan. Even if tart looks super fancy, not that fancy to make: only seeds and some other stuff You can find in cupboards. Wanna try? OK, firstly toast quinoa on a dry frying pan until starts smell nice, not burning 😀 and gets bit gold. Place the rest of ingredients into food processor and blend until sticky mass forms, same as all other healthy snacks. So finally, why it is better than those You buy in supermarket? Because it is cheap, way more healthier, just because You do not add any anti-ageing substances which I cannot pronounce… Also, Quinoa Bars Tart is easy to make, imagine – no bake, just bit of toasting, blending and cooling down. Cannot see any reason what stops You – Go and Try!

- 2/3 cup dry quinoa
- handful of dried cranberries
- 1/2 cup cashews
- 1 Tbsp chia seeds
- 1/4 cup coconut shreds
- 1 cup dried apple
- 1/4 cup applesauce
Firstly, preheat clean frying pan and add quinoa to toast until golden and start smell nice sweet and nutty.
In a food processor place toasted quinoa, cashews, coconut shreds and chia seeds, Pulse until everything is incorporated and partly ground. We don't need flour.
Add dried apple, cranberries and applesauce. Pulse until sticky mass forms into a rolling ball. That is when You use food processor, if You have a blender, You will see when mass got really sticky and is good to go.
Transfer mass into air-tight container and press firmly to made a solid form. Let cool down and leave in a fridge.
Meanwhile, roll You marzipan if using into very thin layer, just about able to handle and that's it. Remove quinoa bars from refrigerator and top with marzipan. Then put back into fridge to firm up completely.
Yummy, huh? I hope You like them as much as I do. And don’t forget You can freeze them and hide away from greedy eyes! Basically put bars, or triangles, or rounds, however You cut it into zip lock bag and shut in a freezer. If sealed perfectly should last up to three months, in an ideal world, but I have experience already, it last up to two weeks. Because they are too tasty!
