Pancakes… Every year we have a day of pancakes. No matter how that is made and how it tastes – all world still loves pancakes. Would You prefer sweet ones or savoury? I am a sweet tooth one, so I love chocolate or caramel covered banana pancakes, but time to time also like to enjoy something savoury. What is Your favourite type?
Pancakes at all…
Firstly, food must be delicious and this especially applies to pancakes. So many variations of healthy, not so healthy, some traditional pancakes like Poffertjes or latki, or crepes? Easy to get lost when You not really sure what do You want… In this variety I have some ideas for You which I believe would be a great deal for the Ultimate Day of Pancakes. Spinach Crepes with Mushrooms and Tofu
Recipe is simple as usual and gluten free vegan friendly, because I see no other option. Of course, if You are OK with gluten use plain flour (much much cheaper than GF). So, I am excited about the colour of the batter and it looks so gorgeous and appetising in photos, no doubt tastes amazing too. Lovely way to incorporate more greens into Your day and make food look colourful with some spinach blended into crepes batter. Roll in some sauteed mushrooms and tofu and You are done!
- 1 cup water
- 1/2 cup plain flour (GF)
- 1/4 cup buckwheat flour
- 1/4 cup cornmeal
- 1/2 cup spinach
- 1 Tbsp flax seeds
- 2/3 cup tofu
- 1/2 cup mushrooms
- more spinach
Firstly, place flours and cornmeal in food processor, add flax seed, water and spinach. Blend until evenly smooth mass is achieved.
Preheat non stick frying pan and spray some oil on it. If You can fully trust Your non stick pan and avoiding oil, it is ok without it. Pour batter into a pan, about 1/2 cup at the time and try spread it as much as possible, so crepes will be thin and nice. Continue until all batter is used.
In a small sauce pan place cubed and drained tofu together with finely chopped or grated mushrooms. Saute for couple minutes, add some salt and pepper if You like and add more spinach, as much as You want.
Finally, scoop some mushroom and tofu mixture, place on a crepe and roll it up. Again, repeat until all is used crepes and mushroom tofu mix.
Now there is an option to refry everything again for more crispier texture or eat crepes as it is. Both ways tastes amazing. And drizzle some vegan sour cream on top.
