Pancakes…Did You know that pancakes can be made almost from everything? I bet this is the most versatile meal ever: make it from flour, different types of flour, paleo version with banana and egg only (thanks no), potatoes, zucchini, and so on and on…
List probably would be endless, and that is good! It gives us a change to create and invent new things, why not to mix up the most trending foods in the kitchen and try to make a pancakes from it? I already shared some recipe, so if You are interested please try my Yeast Pancakes with Jam and Pumpkin Pancakes, these are overwhelming, seriously… You think I say it about everything, well, I try my best to give the best flavour to public and food is so tricky thing, sometimes You like it or not and that’s it, but how can You know without trying?
Firstly, about kitchen trends: in mine now the hottest fashion is sweet potato and quinoa. Eat this with everything and everywhere, even some ridiculous combinations happens, but it is life, we making mistakes to learn and I appreciate it. Now and again, for me – ridiculous, for You maybe fabulous, but now I hope You will love this recipe.
Sweet Potato Pancakes
Sweet, but somehow savoury sweet potato pancakes made from only few ingredients gives You good energy boost for a long time. Whole foods are full of fibre and vitamins, not only uplifting but providing You a good mood all day! So, I strongly recommend to eat it for breakfast, to have a super good mood day!
Sweet and savoury sweet potato pancakes can be the best thing in the morning. Nutritiously dense sweet potato with some extra super food blends topped with fresh fruit and home made sauce. A Flavour Bomb!
- 1 large sweet potato (baked)
- 1/4 cup buckwheat flour
- dash of cinnamon
- 1/4 cup almond meal
- 3/4 cup non-dairy milk
- 1 Tbsp flax seed
Mash sweet potato using a fork or special tool. Add buckwheat flour, almond meal, flax seed and milk. Mix everything together.
Add dash of cinnamon and stevia, if You like pancakes really sweet, if not - preheat the pan.
Fry on a non stick frying pan approximately 3 minutes each side, or if non-stick pan is too posh for You use spray oil, just to prevent sticking.
I decided to top my pancakes with sliced mandarins and add some home made pancake sauce made from maple syrup, coconut milk and peanut butter.
In conclusion I want to admit that I am an addict. Food addict – if I rediscover a meal I can eat it days and days, try to makes as many different variations as possible and try unusual combinations. Probably You remember my addiction to cupcakes, it was non stop, one after another and all different, before that was a coconut era, but it never actually ended, I am still in love with any type of coconut. Now I have a feeling pancakes takes place, all shapes and forms and types… But why not, as long as they are healthy and tasty? Everyone loves pancakes!
