Nuggets… Everyone is crazy about it all the time, as long as I remember my life. Do You ever crave nuggets? Deep fried and greasy, heavily battered and so on… Honestly, I never ate them in my life! Not a poor childhood, maybe rich and good, because my mum always cooked food at home and it always was delicious, so we never went to fast food places. However, seven years now I am living on my own, well with my husband and still never ate nuggets! And never feel a need, until this weekend.
Walking through the high street and enjoying my day until strong smell of used and used and once again reused frying oil, crowds of people and noise – I am near one of the most popular fast food restaurants where they selling American style fried poultry… Little chubby boy just left the place with massive bucket of nuggets, must admit portion looks impressive. I thought it must be tasty because crowds doesn’t form randomly, even though I never understand that food in paper tub cult… Huh no chance I would go to that place but I desperately wanted chicken nuggets or something like that with no sign or taste of animals. Here it comes to challenge again, but that is all you can do as a gluten free vegan – create or eat dull boring food. I prefer to create, don’t You?
Cheesy & Spicy Chickenless Nuggets
Chicken nuggets sounds good but what if they are cheesy and spicy? Need only 4 simple cheapy ingredients to make applause worth little bucket of chickenless spicy nuggets, also it won’t happen if You sit and wait so butt up and go cook!
Sometimes crap food could be not so crap food. Let's say Cheese loaded vegan chicken nuggets one of them: crunchy and naughty looking bites leaves You fully satisfied with healthier junk food at home
- half head cauliflower
- 1/2 cup maize + plus rolling
- 1 cup vegan cheese
- spicy BBQ seasoning
Firstly, chop cauliflower into florets and place in a food processor to rice it. After that, place cauliflower rice into microwave safe container and heat about 3-4 minutes until gets soft.
Let the cauliflower rice to cool down slightly and remove excess moisture using paper towel.
Add spices, maize and finely grated vegan cheese, mix everything together to combine properly. Use food processor if You want to, or just mix with fork or spoon.
Finally, scoop about 1 Tbsp of mass and roll it in Your hands to make a nugget. Sprinkle some maize on a flat plate and roll Your nugget in it, to make nice breaded and crunchy coating. Repeat until all mass been used.
Fry in a non stick frying pan with a little spray oil, or no oil at all. Also You can try this in the oven and let me know how it was.
Eat immediately with BBQ sauce or whatever sauce works well for You!
