You know, as a gluten free vegan You always can roll your veggies into big green leaves and be happy, but at some point You will miss good oldschool tortilla wraps which just brings back all memories and put things together in exact way You want. Sounds familiar? This recipe is for You!
Why simple wraps? Becsuse that was my favourite food on a go, but since I went gluten free the price per pack of tortilla wraps went from 89p to solid £3.50 and sadly I cannot afford that! Never even thought about trying those out for sake of interest until I found couple packages in reduced price section and bought. It was the best thing ever! I am not going to mention the name, because product is overpriced I think, and nobody paid for promoting, so fair enough!!🙄 Full of flavour, easy to handle and proper texture what we all missing in gluten free foods.
Therefore it was so amazing I decided to try to make my own tortilla wraps which would be gluten free, vegan, easy to make and budget friendly. No need to spend fortune for a dry pancake in the end of a day! And possibilities is endless!
First of all trying to achieve lovely texture was a challenge and I used whole pack of flour to waste! A lot of waste I know, but once I mastered this recipe I am proud to deliver it to You and share the easy way of eating favourite quick meals on a go in their best!
Vegan Gluten Free Quesadillas
Anyways, after I had a happiness starjumping session, I decided that something really cheesy would fit nicely into my tortillas, so easiest option sounded as quesadillas, because I can use up all leftovers! Gooey, delicious and made in minutes quesadillas literally blown my mind. The only one thing still in my head – why vegan cheese is so expensive? Must be a way how to make really lovely cheese at home, what do You think?
- 1 Tbsp golden flax meal
- 3 Tbsp warm water
- 1/2 tsp finely ground sea salt
- 1-1/2 cup white rice flour + more for dusting
- 1/2 cup arrowroot
- 3/4 cup boiling water
- 1/2 cup canned black beans
- 1 medium tomato
- 3/4 cup vegan cheese
- 1/2 avocado
Make a flax egg from flaxseed and warm water. Leave aside to soak.
Meanwhile, combine flour, arrowroot and salt , and add flax egg. Try to combine mixture with a back of spoon and finally add boiling water.
Once dough looks perfectly combined roll it to a ball and wrap into cling film, this prevents from drying. Anyways, adjust water and flour amount to achieve perfect dough.
Flour surface with flour. Break off portion of dough and form into ball. Press into flour on surface and flatten two times on each side, then roll out with rolling pin.
Cook tortilla in a greased, non-stick skillet over medium/high heat for about 2 minutes on each side. Place on a baking sheet or plate lined with parchment or wax paper to cool. Leftover tortillas can be refrigerated in a sealed bag for a few days. To reheat, cover with damp paper towel and place in microwave for 15 seconds on high.
Grate cheese, chop tomato and avocado, add black beans, mix all together and spread on half tortilla. Sprinkle cheese and fold in a half and a half again to get sort of triangle. Put in a healthy grill and cook until smells amazing and tortillas gets slightly brown. Eat hot.
