After long and weary day all we want is just legs ups, watch good movie and enjoy home cooked food. Fresh new potatoes, carrots and bell pepper roast won’t destroy a hard work in gym, as well as these cute red pepper vegan sausages. And here is the cheat…

I didn’t made sausages myself, but bought them in Aldi. Lovely price for 6 decent sausages was less than two pounds with respectable batches of vegan and gluten free societies approval. What a fancy sentence!

So… Recipe in this case is simple, sweet and easy (not sweet sweet, I rather mean sweet like nice and cute), just veggies, some oil, some spice and old good oven will do a trick!

Not often I found myself cheating like this with You. I mean, buying ready to eat food and giving as a recipe, but I wasn’t sure I can make sausages myself. Worth to try, but not yet, cannot feel confident enough in my own kitchen for this size project, but someday I must try, or maybe You tried already? Please please share recipe in comments if You succeed as home made sausage maker. Information would be much appreciated!

This Spring New Potatoes and Vegan Sausage Roast recipe is simple, nice and easy, just veggies, some oil, some spice and old good oven will do the magic!

Ingredients
  • baby potatoes
  • carrots
  • red pepper sausages (Vegan*)
  • tomatoes
  • green bell pepper
  • oil for drizzling
  • Italian style herbs
Instructions
  1. Preheat oven to 200 C or whatever recommends the sausage package.

    Peel potatoes and carrots, and chop them into nice big chunks. Drizzle some oil and place in the oven to bake for about 10 minutes.

  2. Meanwhile, roughly chop green bell pepper and half tomatoes. 

    Remove baking tray from the oven, add vegan sausages, green bell pepper, tomatoes and sprinkle those Italian style herbs. Also, quickly and carefully shake the tray, as it is super hot, but we want our potatoes crispier and evenly coated with oil and herbs. Put back in the oven and bake about 20 minutes more, until looks gold and crispy on edges, as well as sausages cooked through.

*I found glorious vegan sausages in Aldi, just in deli section, where hummus is. Gluten free, vegan and delicious
