Vegan Vanilla Waffles

Waffles! It sounds like a celebration, yes? Do You like it? What kind of is Your best? I personally haven’t got the best recipe, I like them all! Truly, eat them really occasionally, I don’t know why, but my hands falling down when I am thinking of making them, but not today 🙂

First of all, I want to explain how the idea of making waffles came to my head. We, my husband and I were watching funny dog compilation on Youtube and he was eating oat biscuits with Belgian chocolate chips. Of course, I act that it doesn’t bother me at all, but then I start think of what I missed since cut off gluten from my diet, starting from all takeaway vegan food and finishing delicious waffles, which last time I ate ages ago, so jump from sofa and ran to kitchen with no explanation.

After a while, I came back together with delicious smell of vanilla and huge plate of waffles. Topped with various berries and fruit plate looked so gorgeous and we took some pictures to share with You.

Probably You already noticed that my waffles is different shape than usually, but it is only because I have this really old school waffle pan, where You literally frying them like pancakes, and it has sort of hearty shape..? This pan is a gift from my granny, actually a give away, I remember this pan in her kitchen since I am on this earth! No one on that time knew what is vegan waffles, but now we can make some, shall we?

Simple and delicious waffles cannot be forgotten just because of diet. Crispy outside and tender inside delicious vegan and gluten free waffles is best topped with fresh fruits and berries

Ingredients
  • 1 banana
  • 1 cup coconut milk (tetrapack)
  • 1 Tbsp flax seed
  • 1 cup oat flour (GF)
  • 1 tsp baking powder
  • 2 Tbsp sugar
  • pinch of salt
  • 3 Tbsp oil
  • 1/4 tsp vanilla extract
  • 2 Tbsp cocoa powder
Instructions
  1. All these ingredients but cocoa can be put in a food processor at once and blend until smooth mass is achieved.

  2. Heat up Your waffle pan / iron and pour some batter. Fry until golden and crispy. And just in case You want to jazz up Your waffles add some cocoa powder to give some chocolate flavour and have amazing vanilla chocolate waffle tower!

  3. Serve hot with Your favourite fruits and berries.

Finally, I want to remind You that food is for us to eat and enjoy, not count every bites, calories, macros, or so on. We must be satisfied while eating, surrounded by all good and positive feelings, no shame, no guilt, no worries. Even if You eat cleanest diet in entire world and recently start crave for something sweet and not so clean then carry on and eat, because Your body asks for it. Always listen to Your body, treat Yourself with food or bubble bath, whatever You fancy that moment and always love Yourself!
